- Different groups : short chains, middle chains, long chains, with different abundance in exogenous and endogenous sources
- Different metabolism and different important functions in the cell
- Deleterious effect (ex : hypercholesterolemia) only for some of them (C12, C14,C16), and only in case of excess
- Comparative composition of milk and vegetal fat (palm) saturated fatty acids.
Conclusions
- No reason for considering saturated fatty acids as a single group anymore, in term of structure, metabolism and functions and in term of deleterious effect as well.
- Need of precise epidemiological studies (different saturated fatty acids, dose-effects approach…)
- Time for up to date recommendations without caricatural old statements of toxicity or eviction
- The saturated fatty acids in dairy products have an interesting composition.
